Fesenjoon is a truly delicious, exotic stew, with a rich, nutty texture, and a complimentary sweet/savory flavor. Duck is the traditional meat, but you could use lamb, chicken, or beef. For a vegetarian option, leave out the meat and double the amount of Portobello mushrooms.
1 large chicken breast, cut into pieces
½ cup shredded carrots
3 oz. sliced Portobello mushrooms
¼ cup sliced yellow bell peppers
¼ cup sliced orange bell peppers
¼ cup diced red onions
1 ½ cups finely chopped walnuts
¾ cup pomegranate paste
3 Tbsp. brown sugar
¼ tsp. turmeric powder
3 Tbsp. olive oil
1 Tbsp. tomato paste
¾ cup water
Place chicken and vegetables in the cook pot.
Combine ingredients for the sauce and pour over chicken and vegetables.
Cook in CoolCooker for 4 hours at 200 degrees.
Serve over rice.
